Cattle and sheep farming in Apulia has always been one of the region's main activities, so that the art of cheese-making has been one of the region's characteristics since time immemorial. The tradition of cheese-making has been handed down from generation to generation with all its secrets intact.
Mr Marcello Barone, manager of the Barone Cheese Factory, has successfully handled his family's inheritance by continuing to remain devoted to farming and by distributing the wealth of tastes of the cheeses produced from milk from the Murge Salentine hills. All stages of the cheese-making are carried out within the factory in total respect of current hygene standards.
With the precious cow's milk they produce dairy products such as braids, braids, knots, burrata, sheets, caciotta first salt, scamorze, stracciatella, cherry cream, curd obtained by a traditional process, in high demand in the market of Salento. Even with the milk we can delight us with some products such as cheese, cacioricotta paesanu, casu friscu paesanu marzotica and ricotta.
