The extensive pasture of the Salento Peninsula, which covers most of the plains and the hills of the Murge Salentine ridge, has over the centuries made for a proliferation of cattle, sheep and goat farms. This characteristic of the region has fostered the spontaneous and progressive growth of the zootechnical sector in Salento, with positive results for Apulia's production and, consequently, economy, especially in cheese and wool manufacturing.

Generations of farmers have closely guarded the secrets of their "art" of producing dairy produce and typical local cheeses, handing down their passion and respect for as well as their total dedication to this age-old trade which not only adds a variety of wholesome tastes to our tables, but also provides essential nutrients for a well-balanced diet.

Marcello Barone, the young Salento entrepreneur who manages Caseificio Barone S.R.L. , belongs to one of these families of farmers who are strong-willed and tenacious and who have had a big influence on the Salento cheese sector. Their relatively new firm is in the vanguard as regards health and hygene, so that the dairy and cheese products made here adhere strictly to the Salento cheese-making tradition in full respect of EU laws and regulations.
